- Prior to establishing Penny's Home Care, Penny worked for the Canterbury District Health Board and was latterly the manager of a private rest home and hospital in Wanaka
- Penny is a Registered General and Obstetric Nurse (Dunedin) and has an MBA (Napier University, Edinburgh, Scotland)
